Sweet & Sour Meatballs

Ingredients:
Frozen, cooked meatballs from costco or sam’s
2 cans pineapple tidbits w/juice (12 oz. can)
2 green peppers, sliced
1 cup brown sugar
2 cups kraft spicy honey BBQ sauce
2 tsp. garlic
salt and pepper to taste

Directions:
Combine all ingredients.   Boil to thicken.  
Pour over cooked meatballs.   Transfer to crockpot and simmer for one hour or until meatballs are heated through.

Chocolate Kaluha Dessert

Ingredients:
1/2 C butter, melted
1 C flour
1/4 C brown sugar
1/2 C chopped nuts
1 C confectioner’s sugar
8 oz. cream cheese, softened
8 oz. frozen whipped topping, thawed and divided
8 oz. chocolate fudge instant pudding mix
2 1/2 C milk
1/2 C Kahlua
chocolate shavings

Directions:
Blend butter, flour, and brown sugar. Mix in nuts and press into 13 x 9 inch baking dish. Bake at 350 for 15 minutes. Cool. With mixer, whip confectioner’s sugar, cream cheese and 1 C whipped topping. Spread over crust and refrigerate for 30 minutes. Mix pudding mix, milk and Kahlua. Spread over cream cheese layer and refrigerate another 30 minutes. Top with remaining whipped topping and refrigerate overnight. Before serving, garnish with chocolate shavings.
MUST BE PREPARED AHEAD.
Serves 8.

Enchilada Soup

Ingredients:
1 can cream of chicken soup
1 can campbells nacho cheese soup
1 can of milk (like a soup can full)
1 can of enchilada sauce (the smaller size)
1 12 oz. can of chicken

Optional: Eat with chips.

Directions:
Put everything into a pot and bring to a boil and then eat it.

We ate it with chips sort of like a chili.   It’s got a little bit of a kick to it but nothing that lingers and you literally could walk in the door, pour it all in, and eat within 10 minutes or less.

Poor Man’s Turtles

Ingredients:
60 pretzel twists — mini
60 Rolo candies
60 pecan halves

Directions:
Preheat oven to 325 degrees while preparing.

Spray cookie sheet. Place pretzels in a single layer on the sheet.

Place one Rolo candy on each pretzel.

Place in oven and bake 4 minutes.

Immediately place one pecan half on each pretzel/candy piece. (Press to spread candy and embed pecan.)

Chill until cool.

Au Gratin Potato’s and Chicken

Ingredients:
1 box Au Gratin potatos
3-4 Chicken breasts

Directions:
Mix ingredients for potatos according to directions on box except dont boil the water.  Mix in casserole dish.  Once mixed place chicken breasts in potato mixture.  Bake according to directions on potato box.  Sometimes it may take a little longer to ensure the chicken is completely cooked. 

This meal is great to prepare ahead of time.  Put everything in the bakign dish then put it in the fridge until your ready to bake it.

Chicken and Stuffing Casserole

Ingredients:
3-4 Chicken Breasts
1 Box Stove top stuffing
1 Can cream of mushroom soup

Directions:
Place chicken in bottom of baking dish.  In seperate bowl mix stuffing mix and cream of mushroom soup.  Layer over top of chicken.  Bake at 350 for 30-45 mins until chicken is cooked through.  Serve with a vegetable or salad.

Chili & Cheese Nacho Dip

Ingredients:
1 block velveeta cheese
2 cans chili
1 roll sausage
2 roma tomatos

Directions:
In crockpot put in cheese and chili on medium/high so the cheese will begin to melt.  In pan brown sausage, being sure to chop up into smaller pieces.  Once sauge is browned pour it into crock pot with cheese and chili.  Stir mixture occasionally until cheese is completely melted.  Chop tomato into small pieces and add to dip.  Leave heated so cheese will remain melted.

This is perfect for game nights and friendly get togethers.  Serve with tostidos or tortilla chips.

Healthy Fries

Ingredients:
Baking potato-1 medium potato per adult
1-2 tsp olive oil
seasoning of choice

Directions:
Cut potato into slices.   Cut each slice into strips.   I left the skin
on for the added fiber and vitamins, but you could peel
potatoes first if you want.   Toss with olive oil and seasoning
and bake on foil at 450.    

These are also good using sweet potato’s

Heidi’s White Sauce for Ravioli

Ingredients:
Fresh ravioli from the store - whatever kind you like.  We have used the frozen ones as well
2 T. olive oil
1/4 cup of diced onions
4 cloves of crushed garlic
1 pinch of dry thyme
1/2 cup of white cooking wine
salt & pepper to taste
1 Qt. of whipping cream
1 dried bay leaf
parmesan cheese (fresh is best)

Directions:
1. In a heavy bottom pot, heat olive oil over medium flame
2. Add onions, garlic, thyme, and bay leaves. Lightly saute until onions are translucent. Do not brown.
3. Turn heat to high and add cooking wine, salt & pepper. Reduce wine until it’s almost dry.
4. Add the whipping cream, bring to a simmer, and then reduce until slightly thickened. Strain the sauce through a fine meshed strainer.

Boil the ravioli according to directions.

Drain ravioli and transfer to a large baking dish.
Pour the cream sauce over the ravioli.
1/2 cup grated parmesan cheese: Sprinkle on top of ravioli and glaze under broiler oven until golden brown.

This is by far my favorite dish of all time.  Perfect for a dinner party you want to impress your guests or a special evening in.

Cafe Rio Dressing

Ingredients:
1 packet Hidden Valley Ranch Dressing Mix (mix with 1 cup sour cream and 1 cup mayo - milk makes this too runny)
5 fresh tomatillos
1   7 oz. can salsa verde tomatillo salsa
2 cloves fresh garlic (or more)
2 jalapenos (hotter w/ seeds)
cilantro at least a handful or more
juice from a lime
salt/pepper
chili powder (chipolte if you have it)

Directions:
Mix well in blender

This stuff is amazing!!!  We had it on our salad but it would be so good as a spread on a burger, a dipping for fries, or anything else you just want a little flavor to with out using the standard ranch dressing, mayo, etc.
